  • 1kg Australian Barra

  • 2tbsp soy sauce
  • 1tbsp toasted sesame oil
  • 1tbsp white vinegar
  • 2tbsp olive oil
  • 3tsp maple syrup
  • 1tsp sesame seeds

  • 2 bunches bok choy, sliced lengthways
  • Olive oil
  • 4 garlic cloves, crushed
  • 2 red long chillies, sliced
  • 500g baby spinach

  • Spring onion, sliced
  • Coriander

Step 1

Preheat oven to 180 degrees.

Step 2

Place barramundi skin side down, in a baking dish lined with baking paper. Place all dressing ingredients in a jar and shake well. Using a pastry brush, brush the dressing over the fish then pour the rest over the top, spreading it evenly.

Step 3

Bake for 20mins, then turn the oven off and leave the fish in the oven for another 5mins to rest.

Step 4

Meanwhile, steam bok choy for 5mins then brush with olive oil and grill in a hot pan until lightly charred. Transfer to a serving bowl.

Step 5

In a saucepan set over medium heat, heat 3tbsp olive oil and add garlic, chilli and baby spinach. Cook, stirring until the spinach is wilted. Transfer to a serving bowl.

Step 6

Remove fish from oven and serve in the baking dish or gently transfer to a serving platter. Top with sliced spring onion and coriander.
