Lemon butter barramundi with a walnut crust

Ingredients

  • 1 portion barramundi fillet, skin off

Lemon garlic butter:

  • 2 cloves garlic, finely minced
  • 1 tbsp butter
  • 1/2 cup walnuts, crushed
  • Zest of 1 fresh lemon
  • Salt & pepper to taste
  • 1 tbsp parsley

Method

Step 1

Preheat oven to 180 degrees C.

Step 2

Combine all lemon garlic butter ingredients together and cover barramundi fillet on both sides.

Step 3

Bake at 180C for 20-30mins until golden brown. Serve with a side salad or roasted veg for a perfect finishing touch
